Here's a great Key Lime Pie recipe for those of us wanting taste, but not the calories. I tried this for Easter dessert and it was a hit! This is a recipe from Dh's bariatric newsletter. I prayed he would like it...he's tried a lot of the sugar-free pies from Walmart and some are OK, but mostly, he didn't care for them. This recipe is not totally sugar free, because the Light Yogurt has some sugars, and the graham crust has some too, but overall, it's a great alternative to the real thing.
1 box (.3 oz) sugar free lime flavor gelatin
1/4 cup BOILING water
2 containers (8 oz each) key lime pie flavored light yogurt
1- 8 oz frozen fat-free whipped topping, THAWED
1 prepared 9" reduced fat graham cracker crust
Preparation:
1. In heat resistant bowl, dissolve gelatin in boiling water. With wire whisk. stir in yogurt; with spatula (wooden spoon works too) fold in whipped topping.
2. Pour mixture in to prepared pie crust; refrigerate overnight or at least 2 hrs. (This can be frozen)
